Four that I like for their portrayal of teachers (positive and negative) and for comparison/contrast are Angela & Michael Medearis, Daisy and the Doll (insensitive teacher/turn of the century school), Tomie dePaola, The Art Lesson (negotiating between rules and creativity, circa 1930s), Juan Felipe Herrara, The Upside-Down Boy (sensitive teacher helping an ESL student circa 1950s) (also available on ICDL), and Kevin Henkes, Chrysanthemum (one insensitive, one sensitive teacher, affecting a student's school experience).

And, for older readers, a title on the CCBC list -- Year of Miss Agnes, coupled with Kirkpatrick Hill's "Dreaming of Kansas" article about her own experiences in an Alaskan school.
