I loved Melissa Marr's Wicked Lovely series. (Wicked Lovely, Ink Exchange and Fragile Eternity.) We get to see the main character turn into an immortal and see how she deals with that, and also, how she handles loving a mortal. A reversal of the genders in Twilight, the male is the mortal seeking to be with his love for eternity. The books also blend the fantasy world and reality well.
