Another vote for Turtle Wexler of THE WESTING GAME.
I've also always had a fondness for Victor from LIZARD MUSIC. A lot of Pinkwater characters seem to be (enjoyable) variations on a theme, but there's something particularly well-defined about Victor: his common sense, his love for Roger Mudd, his method for eating a pizza.
