But, when Dumbledore died all of his spells protecting Hogwart's were also cancelled. Wouldn't he have wanted to keep those intact...if it was just a matter of intent?

On spells staying/releasing... there also may be something of intent there as well, if it wasn't Snape. Dumbledore 'petrified' Harry in a flash, since it was all he had, not planning on anything beyond a few minutes, whereas Moody knew that he had to protect the house no matter what, for a long time, and perhaps in setting the spell, part of the intent could have been that it would only break when Voldemort was gone or some such, and could have set it that it would go on regardless of him, knowing that as a member of the OOTP, he might die.
