Even though its layout isn't great, I've always thought that one of the most outstanding nonfiction books is "Round Buildings, Square Buildings, & Buildings that Wiggle like a Fish. Phillip Isaacson's beautiful discussion of architecture encompasses science, math, art, poetry, and psychology.
And all of Jim Murphy's books are so good. He wisely uses a compelling narrative to get and keep his reader interested in his subject, seamlessly folding his research into the story. I love the ones about the Chicago fire, the NY blizzard and the whaling industry as well as the one about yellow fever.
