How about sponsoring a poetry writing session at the library? That might spark some interest. The kindergarten and 1st graders might need some extra help, but it seems that 2nd and 3rd graders would be able to do fine. You could read them examples from appealing books and have them try to model the examples in the books or come up with their own ideas!
Here is a good site that offers advice for teaching kids poetry (though I would say it is geared toward slightly older kids):
