I forgot to refer back to Katie's comment that one explanation of what happened in I am the cheese could be that the child is just a lunatic, and the whole story his raving.
I agree that alternative explanations for what happened does make a book more intriguing, but it seems obvious that Cormier wouldn't have constructed the book the above way. Cormier is clearly concerned with what one individual can do against an evil group of people, government, etc. as others have stated. If the whole plot was just a dream or a paranoid fear, his point is muted considerably. The power of the book disappears. This book is dead serious. He doesn't want to lessen its power.
