wizarding spectator sports

You may not have read Book 4 yet. Chapter 8 in that book describes a Quidditch match from a spectator's point of view, making it all seem very much like watching any professional sport. I think the key to enjoyment must be Omnioculars which can give you a close up view, or slow down the action for an instant replay. Everyone at the World Cup seemed to have a pair of these o hand. Up until Book 4, we had only experience Quidditch as Harry did as a player.

As for other types of Quidditch at Hogwarts, you have to figure that either it's something so specialized that only a fraction of the student body can participate in, or there are lots of "pick-up" games we just don't hear about, since the stories stick so closely to Harry's point of view.
