It may well be a punnish pseudonym. He was, though, a real person, in any variation of spelling in which his name may appear when transliterated into English. I've also seen it given as: Mendele Moikher Seforim. So whether Seforim or Sforim, he's real.
This is just one of those little references that adult readers may note and that lifts these illustrations out of the ordinary -there's more than one level happening here, visually speaking.
(But I do wish I could be more enthusiastic about the text!)

----------------Also, I am not familiar with Moishe S'forim, but the Hebrew word for book is "Sefer", with the plural being
"Seferim", with all variants of the root having something to do with books ( If I remember correctly, librarian is "s"far iah") so I thought that name was in fact a pun- maybe it was a pseudonym?!
